Mary Jo’s “You Choose” Bread
- Line up all dry and wet ingredients
- Line up all measuring cups, utensils, bowls, etc.
Dry Ingredients:
- 4 1/3 cups flour
- 3 cups initial mixing
- 1 1/3 after wet ingredients added
- 4 1/2 t active dry yeast or 2 packages
- 1/2 cup sugar
- 1 t salt
Wet Ingredients:
- 1 1/3 cup 1% milk approximately 115 degrees
- 4 T oil
- 2 egg (slightly beaten with fork)
Step 1
- Mix all dry ingredients together
- 3 Cups flour for this step
Step 2
- Add milk (separate from egg so the heat doesn’t “scramble” the egg
- Mix egg and oil
Step 3
- Add dry and wet ingredients together in mixer
- Mix high 1-2 minutes
- On low add the additional 1¼ cup flour
- Beat until dough is formed into a ball it will come off the sides of the bowl and travels up the bread paddle
Step 4
- Flour surface
- Knead dough 100 turns
- Place in bowl with oiled sides and cover with towel
- Let Rise 10 minutes on warm surface
Step 5
- Roll into rectangle shape
- Spread with filling of your choice (thus “You Choose Bread)
- Poppy Seed (can mixed with one whipped Egg White)
- Fig Butter
- Apple Spread
- Cinnamon and Sugar
- Spinach and Feta Cheese
- Nutella and Nuts
- Pesto and Mozzarella Cheese
- Endless choices / options
Options:
1. Challah Braid (braid)
2. Twisted Loaf (in loaf pan or in circle, ie babka)
3. Cut individual roll size, for example cinnamon rolls
4. Place in bread loaf or on baking sheet depending on desired size
Step 4
- Rise 1 1/2 hours
Step 5
- Brush egg wash
- Bake 350 approximately 30 minutes
- If browns too fast put foil on top
- Let cool 10 minutes
Step 6
- Mix 1 cup confection sugar 1-2 T Lemon juice to taste depending on what ingredient you chose. Be creative like dazzled caramel over Nutella / pecans loaf.
- Drizzle on top

- 1 package active dry yeasts (2 ¼ t)
- 1/4 cup sugar
- 1/2 t salt
Wet Ingredients:
- 2/3 cup 1% milk 110 degrees
- 2 T oil
- 1 egg
Incorporate and mix high 1-2 minutes
On low add
3/4 cup additional flour
